You could use a surface mount wiremold box. You could also use a surface mount pancake box as long at you only have one cable coming into the box. Either may make a regular sconce stick out from the wall, depending on how deep the canopy is. If you are furring out with GOM, you could surface mount a pancake box and you would be flush with the GOM.

Have you got the lamps and measured them, I am sure you will find the cover plate is a 1/2" bigger. Do not use flat bottom gables with scissor trusses. The fixture says that the base is 4" which is what you have now, but it would be barely covered. I would get 3 1/4" octagon boxes. Order different lights.
